Eggs Benedict

(apparently I’m feeling wordy today, or maybe it’s just that I’m waiting on other people so I can get to the work I have to do)

Have you ever had Eggs Benedict? As far as I’m concerned, they’re not all that fabulous, and the hollandaise sauce (at least the recipe that I used) wasn’t really hard, just… weird. But anyways. I’ve had some fabulous variations on that theme, and now I’m trying to come up with some more. My personal favorite is Broccoli-Cheddar, which is basically a poached egg on an English muffin with broccoli-cheddar soup (or something very similar) on top. But then I found this recipe for Tex-Mex Eggs Benedict that was intriguing. There are tons of other ideas out there, but recipes on the internet are a hit-or-miss deal, and you can never really be too sure.
